I think Gareth is simply a young lad who is prone to behaving in a slightly immature way at times, especially during conventions when both actors and fans can get a bit over-excitable and the atmosphere is particularly hot and tiring.
As lovely as Ianto Jones is, Gareth is an entirely different kettle of fish and fans need to remember that no actor is wonderful to their fans all the time. Whilst most people who have met Patrick Stewart say that he was very nice and polite to them, some fans have said that he was moody. And he's an old-pro at being an actor now, not like Gareth who will still be finding the whole thing quite daunting and tiring.
Don't over-analyze a momnent in time too much, especially if Gareth is usually nice and polite to his fans.
